• 50 ml Rutte Distillery Gin Old Simon Genever
  • 20 ml sugar syrup
  • 20 ml distilled lemon water
  • 20 ml essence champagne
  • Thomas Henry Soda Water

GLASS: highball | GARNISH: discarded leek ash | TECHNIQUE: build in glass

Pour Rutte Distillery Old Simon Genever, sugar syrup, distilled lemon water and essence of left-over champagne in a glass. Add ice cubes and stir all ingredients. Top up with Thomas Henry Soda Water and garnish with discarded leek ash.
